Something I miss from Brasil was the Lamen stand just-on-the-corner from where I lived, so I tried doing Lamen from zero, starting with boiling the pig's broken bones, taking out the fat that floated, etc. etc.

SO -- it's "Turkey Day" again soon here in Canada:
This year's menu: - Free-range grain fed, manually "herb butter"-balled roasted whole turkey - Home made baked stuffing with turkey drippings - A penne rigate "mac & cheese" using mild sharp cheddar and parmesan - Roasted asparagus wrapped with proscuitto - Garlic mashed potatoes with/without crispy panchetta - Double-cream french brie with raspberry jalapeno preserves and thin rice wafers - Booze! (+++) ~fa la la la la
