Suggestions from the like-minded?

i'm of the opinion that alot of anime (perhaps most?) is pretty average (crap?)
however, i continue watching it
coz i've watched some really good series which probably could not have been reproduced in any other medium
basically, i'm willing to wade through the forgettables to find the unforgettables
some unforgettables for me were:

Cowboy Bebop
FLCL
Some of the Hayao Miyazakis
Last Exile
Hoshi no Koe
Azumanga Daioh (i guess this doesn't really fit here...but oh well...)
Rurouni Kenshin OVAs

well...that's all i can think of right now...
would those out there with similar tastes/opinions suggest some other series i should catch?
the newer ones available for dloading/sampling would certainly be preferred
