Byakuya said that Ichigo was the 3rd person to see this form of bankai,right (too lazy to check) so in those short 100 years there were 2 other people that Byakuya had to use bankai against.

But the scan clearly states that Ichigo was the second person to see it -- not the third (It didn't take much effort to check in this case). So there was only one other person Byakuya used senkei on. Whoever the first person was though, I doubt he's a character we've heard of before. Byakuya definitely gives me the impression that the first person he was referring to is no longer around to talk about it.

Maybe he had to show that bankai to Old man Yama/Captain General, in order to pass his captain's training exam? (wait nvm...then there would've been 2 other captains there to see it as well?)

He had to show his bankai yes when he became a captain, but I doubt that they in their exam shows all of their moves.

yeah, he said he had only shown the final stage of his bankai to 1 other person, its quite possible (and probable) that he hadn't developed that move when he first appointed captain
