Been playing this for awhile. Don't invest your forma and catalyst on melee until you got your primary and secondary weapon ready. Melee is fun for clearing light infested but pretty pointless against anything else especially going into harder difficulty.
If you want something effective right out the bat, get one with x3 dmg on light infested and go to town otherwise, just roll with whatever weapon you think it's cool.

Assassin type:- Loki can pop decoy or invisibility and geared for crit build. Ash got teleport and smoke bomb. Tank type:- Rhino can tank and charge. Saryn have molt (ghetto decoy) and contagion (Poison dmg+ on melee) You'll want Shade sentinel as well, cloaking makes a world of difference in survival especially if you are going to be in close range of enemies. Other frame can melee decently as well except Banshee and probably Volt.

I was all set to make him into Raiden... Only to find out that he has a measly 10 armor. Heck even a support class like Loki has 50 armor- I thought it was a typo on the wikia! Well I already have Loki so that's one part settled. As for a tanky armored Frame, I'm thinking of Frost, who has the same 150 armor as Rhino. Excalibur seems like a good inbetween but everyone has one so I wanna try something different.

For tanky warframe, you have the option of Saryn, Frost & Rhino.
Saryn have the highest EHP (effective HP) out of all 3 frame despite having 125 armor because +HP scales better than armor. She is one of the best nuker imo since poison dmg ignores armor which is really useful when mob's armor start scaling in endless defense mission. Frost is hands down the best defensive tank with his snow globe ability. Rhino have the best buff and invunerability. All 3 are pretty good in their own way but focus on getting +HP/+shield and ability power related mods (focus/continuity/stretch) before getting +armor.

I've been running Excalibur from the beginning and its a pretty solid frame in all regards but like you say its very common.
Its pretty well suited to melee though and its slash-dash move can clear whole corridors in a heartbeat, its even more effective if combined with Radial Javelin (Excaliburs AOE attack) as you can slash-dash into a group of tougher enemies and then unleash a volley of javelins in every direction. I wouldn't worry too much about Volts poor armor as you can equip mods to counteract that. One thing that puzzles me is that I often see people looking for lvl 40-50 frames to join them on void runs but frames only level up to 30 ? =s

That depends on the map, some of the lower level maps are good for farming specific resources so you'll usually see groups re-doing a certain map over and over (usually boss assassinations) instead of progressing through the system.
Also probably depends on what time your playing at as well I imagine.

Mobile defense against infested has got to be my favorite- its the only game that made me go "Oh you got to be kidding me?!" And that's always a good sign
Which melee weapon would you recommend for Loki? Dual Heat or Dual Ether?

Depends what you want to do with your melee, DE are better at normal attacks spam while DH are better for charged attacks. DE's attack ignores armor by default so you'll be doing full dmg with normal swings while DH have higher charged dmg.
If you are assassinating with invisibility, a strong charge weapon synergize better with bonus cloak dmg.

Hmmm, well I do spam charged attack more ever since I realized it takes me 3-4 normal attacks to do what 1 charged attack could.
DE's ignore armor sounds tempting, but how much does armor affect damage? Actually I wanted to ask that as well- which is better overall, increased weapon damage, element damage, or Armor Piercing?

Charged attacks will ignore armor no matter what weapon you are using which is why it takes more normal attacks to match the damage of a single charged attacks but charged attacks have a wind up time which can be interrupted by enemies.
Armor usually comes into play when fighting against high level mobs. The higher lvl they are, the more armor they have no matter what type of enemies. You'll have to look up the wiki for the formula but overall, the best weapons for high levels are usually those that ignores armor (bolts, bows, kunai & melee weapons with ignore armor). Shouldn't be a big issue for most players unless they start hitting tier 3 void or endless defense @ 20+ wave. If you are going for charged attack build, get Reflex Coil (faster charge) Killing Blow (increase charge dmg) any elemental mods For normal attacks, get Fury (faster swing) Pressure Point (increase normal dmg) any elemental mods Get reach if you are using heavy weapons. FYI, Armor Piercing (strong against grineer, weak against infested) is considered an elemental mods which shouldn't be mix up with ignore armor.

I'm using Hate right now and its probably the best melee weapon I've used so far, especially against infested as it gets a x3 damage boost on normal enemies and will stagger an Ancient on first fit.
I've fitted Fury, Reach and a few other damage based mods making it pretty lethal for mobs since it strikes multiple enemies per attack. Also finally built Ember after god knows how long, I just got to level her up and fit a reactor and I'm good to go.

I think melee weapons with better reach might be more suited for you. Gram has great reach and can hit multiple enemies and once, as well as having a powerfull charge attack and slam attack.
I would recommend it over all the smaller duel handed weapons. I also just picked up the Kestrel last night which is a handy throwing weapon much like the Glaive except it doesn't bounce about meaning you've less time to wait for it to return to you and its throwing charge time seems shorter.

Indeed. Anything that I don't one hit kill I will almost certainly knock down.
I'll need a catalyst for it though as for some bizarre reason I some how "lost" one after the last game update.
