Tenjou Tenge: Bomb A Head: This song is ridiculously catchy, every time I hear it, I feel the need to dance.

Air TV: Tori no Uta: A very beautiful song from Lia.

Busou Renkin: Makka no Chikai: Like Bomb a Head, a ridiculously catchy song. Gets me real pumped up.

Elfen Lied: Lillium: A very haunting and beautiful song, fits the show very well.

Record of Lodoss War TV: Sea of Miracles: a very beautiful song, sends shivers down my spine.

Endings:

Clannad: dango daikazoku: a cute and at the same time very fitting song.

samurai Champloo: Song of Seasons

Shakugan no Shana: Yowake Umare Kuru Shoujo: I like how the end of the episode often transitions into this song. Immensely addictive.

cowboy bebop: the Real Folk Blues

Honey and Clover: Waltz: a nice bittersweet song that fits the series.

Mai Hime ED - Kimi ga Sora Datta

I'm not sure why, but out of every ending song I've heard so far, this is the one I listen to the most. On iTunes, it's already at 6966 times listened to. XD

Next would be Dango Daikazoku (Clannad) and Song of Seasons (Samurai Champloo).

For OP songs, it would be Purachina (Card Captor Sakura Season 3) at #1, then Tank (Cowboy Bebop) coming in a close second. Rounding out at #3 is Forbidden Game (Rozen Maiden Season 1).
