Just one? Wow this is tough but I'd have to say the orginal Eternal Snow by Chingin' My Life. It touches me with its overwhelming beauty and sadness. I actually shiver when I hear the refrain. That's pretty hardcore love I think. ^^;

Hmm.. that's tricky but when I think about it... !

Bubblegum Crisis - Rock me - I was 8 years old and will never forget it... It's special. My first anime music track. I used to rewatch the first VHS all the time, only for Rock me...
Record of Lodoss War - Kaze no Fantasia - I love orchestra and have listened to this one in my early years. Such a heavy but still sweet piece.

To be honest... the current anime epoch is letting my taste in music bloom on it's fullest. The music became excellent and I've got so many faves... There are the Bleach OPs, Shakugan no Shana OP/ED, Basilisk OP, Erementar Gerad OP... and so much more. They'll all become a sweet memory, one day... I hope the anime music will stay as good as it is, atm.

Himikoden ED - Pure Snow (Yuko Sasaki, 1999).

Whoever wrote this song was amazing. I eventually was asked to play it at somebody's piano recital a few years back. I also recommend:
