sorry dunno about some volleyball animes...(maybe some members knows)

ok just adding Striker Hungry Heart ~ soccer/ this one is nice IMO...
Major ---> Major 2 ---> Major 3 ~ baseball and it's good either though it had many episodes...
Overdive ~ cycling and it's now ongoing...

you can watch dash! kappei on youtube, it's basketball anime (don't bother comparing to slam dunk by the way), though it's raw it's still awesome.

track and field - there's some of that in battle athletes victory!
and suzuka (haven't seen it heard it sucks and rocks)

and a little bit in vision of escaflowne

Eyeshield 21 definitely - the characters are unique, the art - i am not a defender of the anime but the manga is AWESOME - you can totally see the love the artist has for his work and the professionalism. I'm not sure how well this love translates into the anime, but i'm sure you wont regret giving it a try

oh ya, it's about american football (which i'm not into at all... but the manga still captures me)

i can sure point at airgear ( its a anime about inline skating )
the art is absolutely great and also the whole atmosphere with the music and such
