azami goal is create a "uniform" type of food which will make every person "does the same" no more "different type of foods" all wild make the same food because that is the "only food" which will be perfect.

Souma want to proof which you can make "any type of food" and still good and perfect as if was peoples making the same food.

That is when they are different, he is using nakirii to proof that point, which he can make a "wild food" which even the god tongue queen can feel delicious breaking azami point, because if any type of food can be that good then azami logic is wrong.

to be pratical, Azami goals is to gatherer the "best chiefs in the world(the elite ten) and with them create the "ultimate master supreme cooking recipe book" and every chief in the world must follow that book otherwise they will be doomed making central rule over the culinary world and no more room for being "original" because this will be the central role.

Not really.
Azami's idea is that there's only one proper way to cooking, and Erina's tongue was the key to prove that idea of his correct and also to carry out that idea, since the God Tongue would never approve of some low level cooking, or so Azami thinks.
Souma using the God Tongue to deliver his own dishes is a big "fuck you" to Azami, because by pleasing Erina's Tongue with his own cooking he's completely shattering Azami's idea, since Souma does his own thing fully deviating from whatever idea Azami may have of what the proper way of cooking may be.

Souma is completely wrecking whatever it is Azami stands for.

It depends on what Souma has done exactly. Erina's shock suggests to me that he didn't follow her advice at all, in order to prove the God Tongue isn't needed to make true gourmet. Basically what OliverTwist already said. He may have gone as far as to make two appetizers, one he made following Erina's suggestion, and another he made all by himself to further prove his point.

And it's also possible that, like @Kanon just said, he made two dishes where one was made by following her advice and the other by doing his own thing. he had no need to submit both, he just need to submit his own version, and still making Erina version so they can compare, to the judges, they just need to evaluate the dish present to them, whatever Souma make else is his own freedom, they could compare the 2 dish, but the one who got evaluated is ultimately the one consider when they compare between 2 teams

Spoilers are out. Souma's meat looks like it was made by a cave man. Souma's dish is so good that even Azami admits it rivals Tsukasa's dish. But because it's so good, Erina has to create a dish that surpasses Souma and in order to do that she has to create her own specialty which she has never done before.
