Beside the obvious titles from Shonen Jump (Naruto, Bleach, One piece, Dragon Ball, Gintama, etc), I’ll just list some animes that focus on the fighting itself coz there are literally hundreds of anime that has fighting in it in some form or another. Ok, here comes:

History’s Strongest Disciple Kenichi
Tekken Chinmi
Hokuto no Ken (Fist of the North Star)
Street Fighter II movie
Street Fighter II V (series)
Street Fighter IV
King of Fighters OVA
Virtua Fighter
Fighting Beauty Wulong
Hajime no Ippo
Katanagatari
Ring ni Kakero
Beelzebub
Yu Yu Hakusho
Fuuma no Kojiro
Air Master
Basilisk
Hunter x Hunter
Tenjo Tenge
Shurato
Ikkitousen
Flame of Recca
Queen’s Blade
Rurouni Kenshin
Kure-nai
Freezing
Maken-Ki!
Yoroiden Samurai Troopers (Ronin Warriors)

There's A LOT more, but I think this is enough for the moment.

half of those titles concern girls fighting, so if you wanted something thougher, i'd suggest you go for Yu Yu hakusho: you can't be mistaken there. It got only fighting, cool and developed characters, cool training (no random absurd powers that awaken from nowhere), cool fights, entertaining plot. The anime starts on yusuke resurrecting, but then it only focuses on tournaments involving demons and other nice characters.

Ah, the protagonist is also kickass and a bit rude, but he's good natured.

Correction: from the 25+ titles that I mentioned above, the titles that only concern with girls fighting are just 5:

Queen’s Blade
Maken-Ki!
Freezing
Ikkitousen
Fighting Beauty Wulong

The other 20+ of them are dominated by Macho Bravado!

Perhaps you are correct. It was me who was at fault there, my eyes just saw the titles i had watched that concerned girls fighting. (btw, i remember streetfighter had girls fighting aswell, if i'm not mistaken, even if they weren't the focus of the movie, and same goes for Tenjou Tenge. But ye, those mainly got guys fighting)

I totally missed where the OP asked specifically for guys fighting.

Kenichi has fighting girls too btw. The horror. Except some are about the coolest chars in the anime.

Seirei no Moribito has cool fighting, and has a female lead. Of course, it is an outstanding anime with high production values.

Shura no Toki is good too, but has a girl fighting among 2 or 3 guys. Really, those anime makers.

Fate/Stay night has some cool fighting, but you guessed it, there are girls fighting, too.

Black Blood Brothers in case vampire is ok. Some cool chars, and cool fighting scenes.

Modern style like Black Lagoon (girl alarm!), Gungrave etc.

And now I am not in the mood anymore for the girl alarm for our lil machos.

But yeah, OP should maybe specify more what s/he is in to. Fighting is soooo broad, mecha, vampire, martial arts, guns etc.

Afro Samurai is pretty good in terms of straight action as is Sword of the Stranger. If you're interested in sword fighting, you can't go wrong with these.

If you want something more physical, you could try Grappler Baki.
