Honestly, fate/hollow ataraxia should be played too to get a deeper character development. They have different side stories to see the different characters in action.
Playing halfway into it, I find Lancer an interesting character. Even if he's a servant, he's just one big fratboy on the inside. And he keeps hitting on the girls from Shirou's school. |

F/HA is a fun disc. Technically, the starting point of the game is very contradicting as it contains information from all 3 endings.
Spoiler:
And it's kinda' of implied that F/HA is definitely not a true sequel to F/SN. |

Well, I was only wondering that in regards to character details, since it sounded like you were saying that those details about Lancer and the others might not be canon. I don't know enough about F/HA's plot to make an assumption on whether it was canon.

Lancer imo was one of the cooler servants, with his noble phantasm and what not, but when you compare his popularity with the girls he clearly lacks something and thats character development. He's a very minor side character in fate, and in UBW hes just there because he is so naturally people won't put him at the top but I'm pretty sure because of his noble nature and playful attitude people like him.

My favourite is a toss-up between Shiro and Saber - Shiro because of his heart/strength and that he's one of the most interesting takes on a would-be hero that I've ever seen, and Saber because of her strength/heart, she's one of the most interesting takes on a hero that I've ever seen, and her relationship with Shiro. But since Saber's thankfully ahead in the poll, I'll give my vote to Shiro.
Lancer isn't far behind at all, though. Despite his limited screentime, he had some very strong presence. And being an Irishman born and raised, I can tell you the take on him here isn't just accurate to the actual legend, but that that man is most definitely Irish.

Certainly not the only one, Lancer's awesome after all, shame he just didn't get much attention in the game! His power's almost always limited by Kirei, so you never really get a chance to see his true potential. His personality, a mix of honour, loyalty, bravery, and just a touch of the skirt-chaser is fun to see!
