They're supposed to be black, I think... It's probably Arakawa-sensei shading his eyes that make them look blue. Roy looks fairly Asian so I'm pretty sure he has black eyes.

No, wait. I'm positive. I just remembered that I read in one of the light novels that his eyes were 'jet black' or something like that. So yeah

Are any of the animated omakes subbed? Or isn't any group doing them?
And are they the same as the manga omakes or are they totally original?

There are some faithful to the manga and other totally original ones.

And nope, haven't heard of any group doing them, unfortunately.

I'm caught up with the manga but I don't know it well except for the last 10 or so chapters. Which chapter was it where Edward was in Resembool again? There was an important exchange with Winry.

I have watched the FMA S1 (52 eps + OVA) and I'm in a dilemma: should I read the manga before heading for the new adaptation of the manga, which is said be a more true to the manga than the first one, OR should I just watch the new adaptation and read the manga a few months/years later?

Currently (and this is me) Ive read the first 10 vols of the manga and have it on hold til Brotherhood is over since though I know this is more true to the manga it has cut out stuff. personally I usually like reading the manga after I finish so I can see the differences. I am enjoying Brotherhood a lot.

in my case: I started with the anime up until the episode 4 or 5 and after that I couldn't help myself to read the manga!

It really is up to you: do you want to know what's gonna happen and enjoy/criticize the art, animation and music?

or

do you want to feel the suspense of what's gonna happen next, guessing how the outcome is going to be?

either way you'll enjoy it

Well, I started reading the manga long time ago, after watching the first anime. Read the releases in my region therefore I wasn't that far in it when Brotherhood was announced (got 11 Volumes).
I watched about 4 episodes and then went to read the rest of the manga.
And now I caught up to the anime. And I enjoy it immensely. But a lot of dialogue and characterization is shortened or entirely cut.
It really depends on what your preference is.
I'm happy about my decision to go for the manga first
