I think it's less about heart, and more about following instructions
if they tell you to make bento, you make bento, and not sushi

In my field, you do what the client wants, you don't deviate from it. If you want to deviate, you must first tell the client about it.

I'm going to assume it's the same in the culinary world.

Except that Sushi Bento isn't unheard of. It isn't even rare, so it isn't about "not following the instructions", but rather how it isn't the most suitable bento you can have.

you can have sushi in bento, but bento entirely made out of sushi is unheard of

then again, I'm not a chef

edit: but I think your explanation makes more sense. Bento is something prepared at home, right?
How many people can prepare what Alice made at home? It seem it would require extra resources that not everyone might have.

Not really. In Japan, there's a lot of bento you can buy from convenience store. Ekiben(bento sold in train station) is actually quite a popular "fastfood" like ramen because each train station(well not each station, but each city's station I guess) has their own unique ekiben, so I don't think the extra resources is what cause Alice's loss. Some Japanese restaurant even have a bento menu during lunch.

So how is the sushi bento not the most suitable bento you can have?

Nope. Its not. Unless your a traditionalist. A traditionalist wouldn't count Molecular gastronomy as cooking at all. Using molecular gastronomy in the series is pretty hard if you want to be realistic as a lot old school judges don't really appreciate it. They find it to be just another fancy gimmick.

You can buy a convenience store sushi anywhere. In cooking there is always deviations. Its non-linear. Cooking world is vast. Your idea of what something is might not be their idea though. This is why when it comes to judging there is major bias.

Just saw the ch 66 raw just now, and the Old man Senzaemon was already stripping midway of the chapter when the judges are eating Souma's Nori Bento.

Then the last page ended with a bang! A giant paintbrush and a scroll as he named the winner of the match is Souma.

Along with his signature catchphrase: "It wasn't much."

That's actually the point though, her bentou, while delicious, didn't do anything to advance the bentou culture. In the end, it's just a "sushi in a box". Whereas Soma's bentou while conforming to the practicality of a bentou, it did more to suggest new venues for bentou culture to expand.

Always thought Alice and Erina are equal, but it seem like Erina is much more skill than her. Well it set to guaranteed Soma to won the autumn election it kinda boring slaying the main boss so early I guess we have to look toward other contender's match, I wonder how Erina is gonna react to this, her grandpa even give Soma his approval of acknowledging his skill. Soma's reputation should be even better now.

Main boss, who is that? Don't you see that Soma won against Alice just to get both the 1st prize and his heart taken by Megumi later?

It's kinda cute seeing Alice, a master chef in gastronomy, being completely oblivious about these snacks that uses exactly the methods in her cooking style. She's like staring at the snack like WHAT IS THIS WIZARDRY... oh it's my own thing.
