If you want really gory Shigurui and I heard Gantz was. Goddamn I was too slow. What he said.

And Texhnolyze in some parts can be gory but no way as exciting as most action.

Elfen Lied and Mnemosyne are definitely two of the more gorey anime series I have seen. Just to give you an idea... in the first 5 minutes of Elfen Lied a naked chick kills like 30 people quite violently with blood all over the place and be-headings where you see the spine and muscles in the neck.

Higurashi is also pretty gorey from what I remember.

School Days I know has a really gorey ending, but I can't remember about the rest of the series.

From what I remember Blood+ and Hellsing had a bit of blood and gore. I think with Hellsing I think the "ova" Ultimate has more... but last I looked Hellsing Ultimate is being released super super slow and I don't think is close to finished.

^ Seconding Hellsing Ultimate. Awesome, awesome show with bucketloads of blood. There're already 7 episodes out though, with the 8th coming out this month, and it's close to finishing.

Don't know about School Days since it was only the ending that made it so gory.

Otherwise going to second these animes.
Elfen Lied (instantly draws you in with the massive killing at the beginning)
Higurashi (the first season is best fit for this, while the second season is merely to explain the madness)
Deadman Wonderland (Psychological, Bloody, all placed in one anime. Defiantly recommended)
Blood+ (Instead of only focusing on one aspect commonly seen in vampire animes, it actually shows some gory scenes)
Hellsing (I really have nothing to say that nobody else said

Oh, forgot one, maybe Strait Jacket? It's a really mini OVA series, where a magician fights gross demon creatures. Lots of gore if I remember correctly. Not much plot but I quite liked it.

Deadman Wonderland is more like gore for kids. Try Genocyber, Cybernetics Guardian, Crying Freeman, Wild 7 or Choujin Densetsu Urotsukidouji.
