Those are the only ones who are not necessarily flat, however they hardly fit to be called villains.
Examples. Pain, Big Boss, Aoshi Shinamori, Lelouch Lamperouge (You forgot 2 add him)

3. The ones who just enjoy killing / being evil.^^
I have to admit that they are also flat but they´re not easy calculatable. In addition, those are the only ones who can never be convinced that what they do is wrong. The only thing that would make them stop killing is getting bored by it. And that´s why I like them the most.
Examples: The Joker, Kid-Buu, Priscilla,
Sorry, can´t think of more right now. ^^

killing for the greater good is uaually quite a selfish thing, and Itachi was far from that. he is more like a tragic hero, from the start he was set up to lose, but in a way he won as he made sasuke strong, just he couldnt make him realise the truth, it was the only way to get strong

that is exactly the thing that may tip the scales in the good guys favor in the end and bring down Madara .. if Madara will be the coup de grace, the end boss, the BIG BAD (which I believe he is) then it was never meant for Itachi to vanquish him (and even now it will require a lot of power pooling from the good guys and perhaps Sasuke i think) and even so, Madara was weary of Itachi, who could match him (he just didn't have immortality and protection against blindness) and I'm pretty sure was glad when Itachi dies, even though he knew that would happen

PS Itachi is awesome ... easily my fav char on Naruto, followed my Minato, Kakashi, Jiraiya, Deidara and Tobi/Madara
