Hellsing Ultimate(Hellsing 2006), Ovas that are made much more like the manga than the old Hellsing series. This stuff is really great, lots of violence and they dont cut down on it at all. Characters are really well made so I dont think you will dislike this.
There are just 2 eps out now but they are like 50min long each and also the next one is coming in february.

I second and third all the other posts and I'd like to add Berserk. The anime is very good up until last episode that just leaves you hanging, forcing you to read the manga which is on the other hand Awesome.

Elfen Lied is a must if you want violence
You could also try some of these:
  • Ikkitousen (Fan service. Lots of pantie shots and ripped clothes)
  • Tenjho Tenge (School fighting)
  • Basilisk (Samurai)
  • Samurai Champloo (Samurai)
  • Peace Maker Kurogane (Samurai)
  • Black Lagoon (Really good gun action)
  • Bakumatsu Kikansetsu Irohanihoheto (Samurai)
  • Blood+ (Katana usage)
  • Karas (OVA) (This is really special, in a good way)
  • Ninja Scroll (Samurai)
  • Samurai Deeper Kyo (O'what ya guess.. More samurai)
  • Utawarerumono (Edo style wars)

Well... There is always Naruto and Bleach, the never ending animes

I second Ninja Scroll and Hellsing, both very bloody and violent with a great style and story, definately not just senseless blood spurting.

You could also try watching Fate/Stay Night while your at it. It's not as violent as Hellsing or Elfen Leid but it has plenty of action and a good storyline too. Plus, it has a little darker mood around it.

Fate/Stay night has darker mood than Elfen Lied ? It is no fairy tale, but as far as dark mood goes it has a long way to go in order to catch up with Elfen imo.

Oh no, I'm just saying that Fate/Stay Night has a darker mood but not as dark as Elfen and Hellsing.

Another tip would be Ninja Scroll (the movie), it got some nice raw violence in it.
