I love One Piece's soundtrack. Especially the background music.
FMA and Monster have good soundtracks, too. EDIT: And how could I forget Ouran High School Host Club? The background music is really good.

The OSTs I listen to most are from Mushishi, Ergo Proxy and Samurai Champloo. I find they have the kind of music I relax the best to.
Ergo Proxy's OST is eerie and sort of melancholy but I find I can relax and work easier with it playing in the background than other types of music. I like tracks like WombSys, slow but with a somewhat dreamy feel to it. 2 Messages, The Space Between Two World, World Without Words and Ole are my favourite tracks from the Samurai Champloo OSTs. They're fairly long tracks and are nice to relax to. (Does anyone else feel 'World Without Words' sounds like something straight out of a Gran Turismo game? ;P) As for Mushishi, just about all tracks are nice and calming, a very nice sound.

Cowboy Bebop has probably the best sound track ever. Once someone has heard Tank!, Call Me Call Me, and Space Lion, they will surely agree.
I thought Code Geass' sound track was very well done, we it was very catchy. Brotherhood's sound track is shaping out to be very good as well. |

I believe Casshern Sins and Soul Eater have some of the best tracks ever. Black Star's Theme song is most likely the best theme I've ever heard in an anime following Hiei's (Yu Yu Hakusho). The first season for Higurashi No Naku Koro Ni also has one of the best openings and endings. Yu Yu Hakusho itself also has some of the most fitting theme songs and excellent opening and ending.
