The Asuna from anime episode 5 is clearly not the same Asuna in Rondo and Monochrome. Is the Asuna that Kirito meet in side stories (Rondo/Monochrome) was a fake or NPC?

Well, first of all it's been 2 years between the stories. People change in two years, especially when they're trapped in a death game.

Second of all the author is basically retconning their entire relationship with his rewrite of the early floors. The fact that they met on floor 1 at all is already contradicting a few things.
