It was actually a deleted scene, added into the extended version of the movie.

The Extended Version of Return of the King. It was cut in the Theatrical release because the movie was way, way long.

I really don't understand why they would cut off such an important scene. I always wondered what happened to Saruman after the Ents flooded the place.

That particular scene was a few minutes, yes, however (off the top of my head) the extended movie had something like 40 extra minutes added. I could be wrong and it was only around 30 minutes, and one of the other moves had 40 minutes.

Well, that was different than what happened in the novel as well. The original movie scene was enough for the plot to move forward. (He didn't die at Orthanc in the novel, but the means of his death was the same...just in a different location).

They cut the Battle of the Shire bit from the movie....which was a good idea...the number of endings was rediculous as it was without yet another small conflict/battle/mini-climax and all that added after about everything we saw before they arrive back in the Shire.
