In China, rat meat is sold as lamb:

"Authorities said that traders bought rat, fox, mink and other uninspected meats --
and after adding red coloring and other chemicals -- sold them as lamb rolls for
markets in Shanghai and neighboring Jiangsu province."

rat meat by itself isn't a issue. the real issues is where the meat comes form and what the chemical additive were used.

The chemical additive used is only one part of the processing than could have a impact on the quality of the meat. And even after the processing there's so many way thing can go wrong until the consummer get to eat the product...

Given the mislabeling of the product, I wouldn't be surprised if there's also others issues as well.
