I actually had to look it up, when Touma sprayed water on her during the meeting before the first match, in the LN her underwear was described as:

^I checked my copies. The first is the downloaded when its originally aired. Its white but not totally light. Maybe pinkish but not pink. Then I check my bluray version. Its not pure white.... kinda pinkish or purple?

But the point is its not that pink. The shade used in the manga is a lot darker but in the same color(probably) but the anime version is lighter which is close to white than the manga version.

The scene where Fukiyose change clothes is first when she got wet because of Touma's misfortune. She change her clothes there. Then after that is when the game is finished. She changed twice. That underwear is probably new? or the one she wear during the game and well, she is still changing when Touma barge in.
