How about Durarara? It's by the same author as Baccano, meaning it features a very colorful selection of characters, and can be quite the mature series. Plus it has a great score, that really stands out and brings life to a lot of scenes, just like Baccano.

I'll pick out some that have been recommended above:
1. Basilisk (plenty of gore/nudity) 2. Berserk (haven't seen it myself but my friend kept asking me to) 3. Ergo Proxy (quite a deep anime with character-driven post apocalyptic setting)
