What's the difference between Caliburn and Excalibur?

Well, to answer briefly your question.

Depending on the legend, Caliburn and Excalibur are either one and the same sword or two different swords.

In the latter case, Caliburn was the sword of selection, the one King Arthur pulled out of the stone. Excalibur was, on the other hand, given to Arthur by the Lady of the Lake after he had lost Caliburn IIRC.

I do agree on your definition of fanservice although the fact that they emphasize these scenes can fall into fanservice. But I ain't complaining of course, since Fate path is my fav scenario.

Well, since she doesn't use it one handed, I take it both her swords are two-handed, or a bastard sword. To wield a two-handed sword in one hand, you have to be some sort of giant, or have a feat that allows that, but imposes a -2 penalty on attack. If you want to wield a bastard sword in one hand, you need an exotic feat. To dual-wield you need all the line of Two-Weapon Fighting feats and insane dexterity. In D&D, the muscle is not required, but it is essential, if you want to negate all those dual-wielding penalties.

If Saber was to use Caliburn (even though thats impossible, or you could just have Shirou tracing them one after another for her) then she'd probably just use that, or Excalibur - the chance of Saber with the style of pride that she has, she wouldn't use two swords.

Though, there are bits of fanfics around the 'net with her holding both swords.
