ok, so basicaly i want something with

-romance, but not TOO MUCH romance.
-a lot of fantasy (or supernatural stuff).
-comedy
-good caracters
-good story
-action
-adventure
-a bad guy that, in the end, they have to destroy

And don't tell me an anime that has no end, please!

And, ok, this is gonna sound really ridiculous, but i realy don't enjoy animes (or mangas, but im looking forward to animes) with a guy that's too sensitive.
and (omg, i can't belive im actually saying this, but...) i really... how can i say it...
HATE
guys with big eyes. (that's right. BIG EYES)

you know, those guys that have the eyes as big as the girls.

(if you didnt get what i meant, ignore the eyes part)

i like stories where the guy usualy save the girl. the girl can't be too sensitive/naive (no sakura card captors, please. although i really enjoyed that anime, im not in the mood to watch something like that again.)

the girl (or the boy, or both. whatever, although i'd prefer if it was the girl) is just having a normal day in her normal life when something happens and it changes everything.

and not only the girl (or the boy), but both of them have to be in love with eachother.

basicaly, something like InuYasha (if you know this manga/anime)
NO MECHA NOR GENDER BENDER!
and if its a manga, no manhwa nor manhua.

Well... the anime of Ranma 1/2 would not fit the bill. But the manga might. Same author as Inuyasha.

Anime version of Soul Eater would fit most of your requirements.

You might also try Crest of The Stars.

I'd suggest Full Metal Panic, but you said no mecha. Although Full Metal Panic isn't really a mecha show... more like a comedy/adventure that happens to occasionally have mecha. I know lots of people who don't like Mecha who like Full Metal Panic.

busou renkin i already saw, almoust as good as inuyasha (really, i LOOOOVE inuyasha!)

Well with those requirements you're asking for two come to mind that you might enjoy Omamori Himari, and My-Hime both series have almost everything you want in it though not sure would be enough romance in them. While for Omamori Himari I am not sure if you'll find Yuuto to be too sensitive of guy, or not to you I can't really judge that for you xD. Also My-hime some would argue it's a "mecha" series but I don't consider it one, or think it is a mecha anime, kinda depends on what you consider a mecha series, just watch first few episodes and decide if it qualifies as that to you.

Additionally maybe Katanagatari assuming you don't mind a lot of dialogue I mean a LOT. Though for the last requirement is too early to say if the series will have since it's only 3 out of 12 episodes aired.

Both of these are mecha

Baccano! (13 eps+3 OVAs)
Gintama (201 eps)
Fairy Tail (manga preferred - 180 chapters, weekly)
Defense Devil (manga, 43 chapters, weekly)
Fullmetal Alchemist (either brotherhood anime - 51/63 eps released, or the manga - 102 chapters or so)

Ah! My Goddess! fits into your description pretty well. The manga is not finished yet, but the anime is quite ok in this case.

Tsubasa Resevoir Chronicles - I thought it fit all your criteria nicely. When you're done with anime and the OVAs, read the manga to finish up the story.
