Yui is still a soldier or did you forget that part as well? It doesn't take 3 years to recover from her injuries which weren't even that serious. Considering that Japan has a shortage of pilots and she suffered through the 8 minutes of death(Which is a rite of passage) that means she will be used at every chance they can get since she's a proven pilot and 3 years later she still isn't dead. That says a lot about her ability.

Well she was more of a trainee during the battle for Kyoto to be fair. She and her friends were stationed at a resupply base away from the frontlines for that exact reason, which didn't turn out to be a safe place.
You're also assuming a lot since we don't actually have any concrete evidence to prove. You could be right, maybe Yui did spend the three years battling the BETAs or maybe she spent some time in a psychiatric ward after the Battle of Kyoto. The point is we don't know and are waiting for the next episode to shed some light on the issue.

I didn't say she isn't skilled, I am simply saying that we don't really know what happened to her during those three years. Yes, we can assume that because of her rank and position she must have done something to achieve those accomplishments, but what exactly we don't know. The next episode will then likely help expand her background a bit more so we can understand her side of things better. So please calm down.

The anime certainly hasn't told us what Yui has been doing the last 3 years, but the implications at the end of ep 2 I see are: while Yui was injured it seems relatively light (she seemed to get up and walk around right away) and the strong implication is that she recovered mentally and refocused her determination to win and not give up. This is very much not the attitude of someone who is going to curl up into a ball for 3 years.
I was re-watching bits of ep 1 yesterday and was reminded that her father is/was a legendary TSF designer (he seems to have been still alive prior to the time skip) - most famously for the Zuikaku apparently. Given we see Yui working on TSF development in ep 3, maybe she decided that the best way to beat the BETA was not to kill them personally but follow in her father's footsteps and help improve weapons... Yui seems wholly focused on defeating the BETA and probably doesn't care about TSF vs TSF combat so much... while Yuuya's training experience seems to be the opposite.

Yuuya himself said that she could have taken him out any time but she did not. Taris who is an expert at close quarter combat won against Yuuya. You could say that she had a superior machine. If that's the case, let us say that Yuuya's skill in CQC is probably equal to Tarisa. Yui took out Tarisa and the others effortlessly yet fought against Yuuya for a while.
