For me, Adventure Time, Katanagatari and a bit of Rurouni. Especially Katanagatari, its whole story is about swords and it has some very creative ones as well. And some nice fight scenes, at least when it's not just WORDS WORDS WORDS WORDS SWORD WORDS WORDS WORDS

I'll just restric myself to anime with real Japanese swords (not in order):

Rurouni Kenshin (classic)
Samurai Champloo (R&B with swords)
Kara no Kyoukai (Shiki + swords = awesomeness)
Fate/Stay Night (Assassin + Tsubame Gaeshi = Kewl!!)
Sengoku Basara (let's party!!!)

I had a great time with those titles.
