I have recently realize how much I love anime's with great dialog and writing. I just finally watched all of spice and wolf and it has made it into my top 5 of all time. That and Steins Gate are in a dead heat for 1st.

based on this info I was wonder what I should start on next since I am a bit of an anime noob I am not really sure were to go from here

Hmmm... You should try Monster if you are looking for a series with good writing and dialogue.

I'll go with Katanagatari, Bakemonogatari and Nisemonogatari.

For a large list: http://anidb.net/perl-bin/animedb.pl...tag&relid=3725

In fact the Monogatari series (only Bakemonogtari and Nisemonogatari) are more like a sound novel with an animated background with lots of dialogues

started monster, yea this is a dark one but its got a really good story line.

Already saw angel beats, pretty good. Gave me a few really good laughs!

I will look into the others, I need something a little lighter to watch with monster

Go with Madoka. Magical girl anime, really cheery.

Ok, since the great titles already suggested, maybe you want to try Full Metal Panic: Fumoffu? if you haven't seen it yet. It's about a soldier boy who infiltrate a school and has a hard time trying to blend in. It has smart & hilarious dialogues and quite light and extremely funny (for me at least).

Puella Magi Madoka Magica definitely has amazing writing, but I wouldn't quite put it in same tier of Dialogue as the above 3, though Seconding it since great writing and good dialogue.

Also I'd suggest Bungaku Shoujo movie and it's related OVAs. And the movie Colorful.

Legend of the Galactic Heroes has a very clear and complete dialogue. The show is mostly talking now that I think of it.

I'll also second the -gatari shows.

Nothing will beat the monogatari series in the dialogue department.
Might wanna try Denpa Onna to Seishun Otoko too, some very nice witty dialogues and a good anime overall.

Durarara had quite a fair bit of dialogue while being entertaining.

The two names I most associate with good dialogue are Nisio Isin and Mari Okada:

Nisio Isin: (Avant-Garde style)

Bakemonogatari
Nisemonogatari
Katanagatari

Mari Okada: (J-Dorama style)

AnoHana
Canaan
Hanasaku Iroha
Wandering Son
Toradora!
True Tears

Here's my list :
Steins' Gate
Key : the Metal Idol

Both have clever-written dialogues.

I recommend Kurenai for both the script and the performances. I believe the actors performed the script before the animation was made so the dialogue sounds much more realistic and less stilted than in many anime shows.
