I would consider Patlabor to be a classic. While nominally about mecha it's really a slice of life series about the pilots.

Talking about the slice of life, Ichigo Mashimaro and Peto Peto san are great classic series.

Patlabor was a great movie!
I loved it through and through. The very fact that I still remember it, after so many years, proves it was worth watching. Something completely different from the modern day action.
Wings of Honneamise also could be considered a classic!
Perhaps I'm gonna see if I can redownload it. I used to own the DVD, but it got broken, and I had to throw it away. Now I can't find it anywhere anymore, unless ordering online, but my online experience with 'special' anime has been quite bad.
Usually the subtitles suck; like for instance, 'Fist of the North star'. I bought it online, and the main character's GF 'Julia', is called Juria, Juliet, and some completely different name too! 3 different names in 1 ep (only sub titles).
Also Bart, called Bats, Batto, and something else.

Also the subs where out of sync, or sometimes just didn't show up. Like an on-the-fly job of someone providing subs while the video was playing; without checking it.

Was the worst subtitle experience I ever had!

While the movie is excellent I was referring more to the anime series which has a more lighthearted feel.

I would recommend this too! This anime never gets old and that's a classic right there. Solid story and characterization.

Scryed - Sometimes called Japanese X-men, very hot blooded
Aria series - peacefull anime, with sci-fi and fantasy elements
Area 88
Full Metal Panic series: 50 percent is mecha sci-fi, other 50 school comedy, 100 percent classic
Black Jack - It is classic and it has some sci-fi elements. No action though.
Scrapped Princess - Famous science-fantasy
Cashern sins
Ghost in the Shell and Cowboy Beebop: Must for any sci-fi fans.
Wolf's rain
PlanetES - very realistic sci-fi with great characterisation, only few genuine action scenes though.
Giniro no kami no Agito- postapocalyptic movie
Akira

PS: Tried avoid shows mentioned before.
