Right, I forgot that he basically is not human anymore after the ending of F/Z.
So alongside giving him immortality the grail also jacked him up a little xD

I'd say it is more the perspective. Kotomine in Zero is dealing with mostly full grown adults while in FSN he is dealing with still growing teenagers.

No, his official bio has about an 8cm change between the two. 185cm in Zero, 193 in FSN.

Perhaps, but even so it is more plausible that he could do so than it is that Saber could. Him growing is slightly odd but perhaps explicable, Saber doing so would be absolutely absurd.

Q: Where does the 'stay night' from Fate/stay night come from? I kinda have an idea where the 'zero' comes from in Fate/Zero: I think it has something to do with the timer at the end of the episode before the ending song. But I never figured out where the 'stay night' came from.

Actually, Fate/Stay Night is final chapter in Fate Route.
15'th day ( final day in Fate ) is divided into two parts:
1. the beginning if the day and preparations for final battle. The Chapter is called "Night Holy Sword restoration".
2. the final battle, destruction of Grail and Saber's departure from the world. The Chapter is called "Fate/Stay Night".

He wrote it like that to represent his original work since in the beginning Fate was consisted only of Fate route, and Saber was male in that version ( today we know it as Fate/Prototype ). Then before the game was out Nasu wrote 3 more routes for the game: UBW, HF and Ilya route. But Ilya route was discarded halfway because HF was too long for it to be adapted as well. And he changed Saber to what we know her today.

The point is this: Fate - your own fate, hence the name. Stay/Night - something that is dear to you and you wish it to say with you, but no matter what you do it will not stay.

This is at least what was explained when Nasu was asked about these things.

I'm not sure, but I think the zero Fate/Zero rather refers to it being a prequel.
If the original work is 1 and a sequel to it 2 a prequel would be 0.
Zero has often be used in this way for prequels.

It only serves as a narrative device (it was in the originals novels too), to show the time passing until the great fire of Fuyuki, and Shirou's meeting with Kiritsugu.

Depending on who you ask, the story of Kiritsugu ending as his ideal to become a hero led him to despair, but at the same time the story of a young boy beginning as he is saved by a man who will later inspire him to become a hero for others as well is pretty deep.

"Zero" hour has a deep meaning, though I'm not sure what kind of deeper meaning you expected. It's when the hero Emiya Shirou was born. FZ started with Nasu and Urobuchi imagining Kirei and Kiritsugu's fight and end with Kiritsugu finding Shirou. FSN is Shirou's story.

Rider is an irregular case. His Reality Marble doesn't traditionally work like a "normal" Reality Marble. He didn't possess it in life and he isn't even a magus. His whole Reality Marble is created and maintained with the combined help of his subjects.

Um Shiro's trace ability. I know they are illusions but do they disappear after he is done with them or is that only if they are incomplete or something?

in one of the earlier episodes of Fate/stay night RIn and Saber find a rea pot and other items and say it isn't reinforcement magic.
