I'll second Planetes and Overdrive but I can't believe no one has mentioned Ookiku Furikabutte, not only is it my favorite sports anime its on it's way to becoming my favorite anime of all time, yet no one knows about it! Saizen has stalled on it but Central Anime has picked it up and is making regular releases as the dvds are released, and they have a status section on their webpage which lets you know exactly where they stand on each episode.

But back to Oofuri as it's known, the art, story, music and characters are all amazing. Some find the main character annoying at first but trust me he grows on you. And it has some of the best OP's i've ever seen.

I think Mononoke (not Princess Mononoke) is an underappreciated anime. It is very stylized and quite the mind trip. Though some things are difficult to get one's mind around at times, I found it to be quite enjoyable from a theatrical point of view.
