While I lean toward zzero's opinion about the Baccano! soundtrack as a whole, I do have the OP as my ringtone. I never have a problem distinguishing my phone from the ones around it!

Inuyasha was actually a good one although I'm familiar of only the endings TV wise.
There are many other good current soundtracks especially the opening to Seitokai no Ichizon but eventually I may end up forgetting.

One series however back in my early anime days (early 2000s) while average in popularity had quite an up tempo yet setimental feel to both the series and the soundtrack. The opening to Onegai Twins Second Flight (Kotoko) was the one song that is still stuck in my head to this very day.

After watching Pandora Hearts, I've grown fond of its soundtrack as well. What can I say? I just like Yuki Kajiura's style.

Mai-Hime has an awesome ost and very good character songs, especially Natsuki Kuga (Chiba Saeko).

Beck, Spice and Wolf and FMP (yes Panic not Alchemist) are some of the most musically memorable series for me.
It's been 4 years since I watched FMP and I still remember "Tomorrow" I think it's name is, Tabi no Tochuu was a very suitable OP for S&W and the internal music was good period style stuff (plus ...7 apples on the witches tree... that line is almost unforgettable to anyone who's seen it ), and Beck had a fairly decent soundtrack all round (although I prefered the dubs redone versions with better english).

Beck's a bit of an awkward one to pin over which is better, because although the English Kouyuki (Greg Ayres) doesn't have quite as good a singing voice as the Japanese VA, which is a shame as the character is meant to have an AWESOME voice, because the songs were in English, being able to speak fluent english without any pronunciation or accent-based problems swung it for me. Brina Palencia's turn as Maho is very good though, and her singing voice easily holds its own.

I haven't got anything against Beck's original voices, but I think Beck is a rare case of the dub actually being better than the original, whilst it loses out in some areas, as music is such a big part of the show, the better song renditions swing it for me

Code Geass - All hail Britannia! and Noblesse Oblige being orchestrated masterpieces. Picturesque and Innocent Days being well done. What stands out to me though is the first opening song 'Colors' and R2's 'World End'. Both are done by flow. Actually, all OP's of Code Geass are well done. Mosaic Kakera being my personal favorite ED.

Overall, Code Geass music is profound and pretty fun to listen to.

Fate/Stay night is epic, I don't have any OST... though I wanted to know the music that played between Lancer and Archer's fight. That being stuck on me Overall, the OP being very likeable as well.

I have to make an honorable mention of Gundam SEED and Baccano!.
