Gundam Wing. People remember TWO-MIX's opening and ending songs and as great as they are, the OST is outstanding in my opinion. Like all Gundam series, certain songs were played quite a lot through the series but they still added something to each scene.

Also like select pieces from Taku Iwasaki's scores of the Rurouni Kenshin OVAs (1 & 2), ROD (OVA & TV).

FLCL has one of the best soundtacks out there. The Pillows +1
I have to say that Bleach has some good tunes but they get old fast.
Deathnote's background music is really good.

The currently running series, Panty & Stocking with Garterbelt, has one of the catchiest soundtracks I've heard; m-flo did a fantastic job with the music and I'm looking forward to the OST. The English in the music and the show itself is pretty good compared to other examples of gratuitous English.

The Tatami Galaxy has a pretty weirdish soundtrack, but it grows on you throughout the series.

I'm not sure about that. When I listened to (and reviewed) Tatami Galaxy's soundtrack, I found most of the music is pretty standard orchestral fare that really succeeds at being wonderful. Especially with stuff like "Watashi's Theme" that comes off as being poignant in the way it seeps in with its melancholy.

Now if you're looking for weird.. hmm... I'd say Yoshimori Makoto's works on Natsume Yuujinchou can get kinda odd. That man loves playing around with sound effects.
