Yeah, animesuki would mean "Anime Love" or "Love of Anime", whichever way you want to look at it.

Another example would be that you "suki" your girlfriend, or your mom, dad, brother, sister, etc.

daisuki means to like a whooole lot! I usually see it used by children who are emphasizing that they like a certain food or person oodles and oodles.
