What you've seen are mostly mainstream anime that are quite popular similar to dragonball.

I guess you can throw in one piece and zatch bell since they are quite popular type of action/story.

For more epic anime(ones that have an ending) you can try:
Samurai champloo-two samurais raised in different environments meet and of course they clash but partner up with a girl whos searching for a mysterious samurai.
Soul Eater- Its probably down your lane; its a different environment in a different world where there are death gods and demon hunters

Rurouni Kenshin, watch up to episode 62, don't bother with the rest since it's filler.

The characters don't really have any kind of supernatural abilities, they're just really strong and quick swordsmen, but the battles are as intense as it gets.

In Fate Stay/Night all characters that participate in combat are either heroic spirits or have magical abilities/enchantment. Best fight scene doesn't happen till ep 14
Basilisk It has some intense fighting and character fight to death.
Kurokami is in most sense below average series but you may like it.
Koukaku no Regios

Edit - Almost forgot - Claymore

You might try Fullmetal Alchemist.

I like it for the characters and deep storyline, but it has a lot of action as well.

Yu Yu Hakusho - its creator is the one who also did Hunter x Hunter, if you liked that one, you'll like YYH. It's a shounen fighting anime through and through. XD

I would recommend The Avatar: The Last Airbender.
It starts off a little childish but gets waaay better as you go along. There are 3 seasons, each 20 episodes.

It takes place in a fantasy world that is home to humans, fantastic animals, and spirits. Human civilization is divided into four nations: the Water Tribes, the Earth Kingdom, the Air Nomads, and the Fire Nation. Each nation has its own natural element, on which it bases its society. Within each nation exists an order called "Benders" who have the ability to manipulate the eponymous element of their nation. The show’s creators assigned each Bending art its own style of martial arts.

Tengen Toppa Gurren Lagann-it's about people living underground and breaking free into the world, as action-packed as an anime can ever get.
Fate/Stay night-Seven summoners or mage-thingies at any rate and their servants in a battle for the grail.
Black Cat-Secret organization, best dude around bails and the others start hunting him
D.Gray-man-a battle between AKUMA and exorcists while uncovering secrets of the past
Reborn!-Random loser turning into mafia boss, nice battle system although it takes a season to start the fights
Darker than black-Secret agencies with possessed people killing each other
History's strongest disciple Kenichi-Weak little guy turning martial artist, above avg plot
Tenjou Tenge-Also themed around martial arts, includes insane brother going Sephiroth on his buddies
Ninja Scrolls-I'll just leave that here...as a last resort!
