Well it also depends on the guy. Some guys are more straight laced in their morals than others. The marriage first group. Others think they are inadequate and brush off the advances as a prank or tease (The "no girl should want me" group). Other are just not ready or have no clue what to do and basically remain "dense" as a defensive messure.

The reason why when a dude gets a chance to get lucky and pushes it away? Very simple, and I'm sure it's already been said:
If he did go with her (and assuming she didn't back out at the last second), it would be called a hentai, and be a one-shot (or be a mutli-chapter hentai)... and those don't make a whole lot of money. Because in order to make money, the tension still has to be there, to draw the viewer and have them wonder "what's this guy going to do?" And usually, if a couple does elope, then other drama has to be added in...

Read Booker's "The Seven Basic Plots" for some insight on the symbolic nature of love interests in media aimed at men and you'll see why a male character will reject willing and offering females.
You'll also see why accepting such offers inevitably leads to the School Days ending.

It's obvious that the first reason to reject willing girls is for the plot sake, but i don't consider it a valid enough reason; i would avoid such event from happening in the first place. I'd prefer to see a girl not teasing the boy, and therefore with nothing happening, instead of a willing girl being rejected and with nothing happening. I hope you get what i mean.

You say to keep up the tension? They could do it by simply create embarrassing situations, like when the boy falls on the girl, or when there is dark, and after the light turns on, they happen to have their faces being very close or hugging each other because the girl is scared of something, and the likes. This is as far as the romance is some light and "calm" story. In the case of Hidan no Aria, the "tension" is always up because of the action, embarrassing situations with Kinji sticking his face to Aria's tits because he fell, Riko's teasing, and Reki's kidnapping. Your complaint is that it doesn't match real life. The point Booker makes is that stories are also symbolic, and that the symbolism of a female love interest is at odds with easy sexuality, and that inserting that symbolism into the story inevitably drives a story towards a tragic end.

Why does everybody think that every anime where the guy goes and grabs several girls will end up like School Days? I mean, come on, I could think of so many other possible endings for that in one minute...hell, like I said before, I seen people like Makoto in real life. Ok, maybe with a much higher social rank, but they just grabbed every girl every chance they got...and that literally continued until they were out of high school (hell, I won't be surprised if they went into college unchanged.) It's not uncommon at all around here for that to happen. Sure, anime is entertainment and not real life, but using someone like Makoto without some violent ending isn't that hard.
Anyway, like I said before...most harem leads are mentally confused fucks that really don't know what they should do. Harem leads are rarely good examples of "morals". A lot of them would love to fuck every girl every chance they get too...problem is that they are too confused to do so. I would actually love to see more anime like School Days...tho that may have to do with personal experiences.
