It was never discussed in any of the story scenes. In the battle for Loop III, Day 2 (where you rescue her from the swarming devils), her starting Rune* is of Alchemy, so we know that she can use Alchemy at the very least (which makes her different than the "standard" homunculi, which have their spell-like powers instead).
*As Sora and other players will confirm, when the story provides that Lillet is "teaming up" with another character, the "extra" starting runes aren't Lillet's default Glamour, but get mixed in with Necromancy (Hiram), Sorcery (Margarita), and Alchemy (Amoretta, Bartido). Similarly, you can establish what magics the teachers have by what they use in battles against them (Opalneria, for example, can actually use all four magics).
My completely unsupported personal theory is that Amoretta can use human magic because of her angel core. We know that devils (well, Advocat, at the very least) can use a variety of human magics, not just Sorcery, and since
GrimGrimoire follows a pretty strict Judeo-Christian template, that would imply that powerful devils are fallen angels and thus would have a similar powerset.
