Saber has no skill to cancel or block other skills. Just a Revival Skill, which is excellent, but considering what the secret boss can do, you are screwed once you lose that. Archer has Rho Aias and decent strength and defense, making him the best overall. Caster can pile on the damage faster using magic or her skill absorption spell, but if you screw up and lose the ability to use skills, you are dead.
The boss can do ridiculous damage with her base attack alone, but her skills are far more deadly.

Saber has the raw power to tank her damage slightly better than the other two, so it evens out. Also, even if Monster successfully seals your Skill option permanently, Saber can manage without it far better than Archer or Caster.
