If you manage to setup Archer with enough tracing, he does more damage with his caladbolg (which also pierces guard) than even caster's her boosted spells with a mantra. Also he has his UBW and s skill that lowers the target's defence to increase his damage even further.
But the problem with archer is that he needs quite some time to setup, so caster is more practical in the damage dealing department.
I think sabre is the weakest, because her skills (her noble phantasm is probably the best one of the 3 servants though) can't match up with the damage of the other 2 servants. Also she has the least amount of mp to spam skills.
