Well, it's the same difference in detail you see in 720p/1080p fansubs for HD-produced shows. With everything being produced digitally, the extra detail is definitely there. And the other way to look at it is that, given the prices you're typically paying for Japanese releases anyway, you want to get the best possible quality. The higher bitrate combined with the higher resolution gives you what should be a near-definitive copy of the work. So I don't think the advantages are any more or less for animation than anything else; if it was produced in HD, it will look better in its native resolution, rather than taking a scaled down version and blowing it back up to full-screen.
