I'm speculating that it's because of some enchantment Rider had placed on the school grounds, robbing the students of energy/mana/blood/whatever. I remember that in the demo, Rin's investigating that enchantment was what lead to her and Archer fighting Lancer, so they might have changed the chronology around a bit.
