That's hardly a trend, I believe.

I can name several anime series that remain faithful to the source material despite their LN/manga counterparts remaining unfinished. Just to name a few: Index, Ore no Imouto, Chihayafuru, and Saki.

What you're claiming only applies if the adaptation happens to move ahead of the source, which shouldn't be all that common a practice. And with the way the LN of this looks right now, there is plenty of released material to cover as much as two cours of content if an adaptation should be made.
