Technically your interpretation of Aijimu is both right and wrong. She wanted to prove the world wasn't manga but she believed it was. So she attempted to do impossibilities (clearly not eveything but a lot of things) in attempt to find something she couldn't do. In order for this to work she actually need to be able to do anything in order to be proven to be right, even though she didn't want to be right.
This would all be completely pointless if Aijimu was passive, she had to try her hardest in order to do everything, otherwise the world could still be manga (as in she could do everything but never bothered to) but with her deluding herself it wasn't.
Basically she wasn't trying to prove herself wrong, she wanted to find the truth, she just hoped the truth would not be what she believed it to be.

Medaka Box is a manga that refuses to accept that it is a manga but it really is a manga.
