I think the sprites will be drawn by Ryuukishi07, although some of the characters are designed by other people who drew some concept art.
And of course, we saw some wonderful portrait art of Beatrice, EVA-Beatrice and Erika in Umineko, so we could see art from other people in-game in a similar fashion.
