Perhaps he wasn't trying to kill Luffy? Have anyone thought of that? It was Luffy who wanted to defeat Moria to get back their shadows not the other way round. Moria was just merely defending the whole time until he lost it and and used Shadow Asgard. Remember if Luffy dies, Oz become immobilsed too.
