For quotes the easiest way is to use the quote button in the lower right corner and just keep what you want to keep within the quote tags that come up when you do it.
For spoilers the easiest way is the use the spoiler tag when you compose the message (it's the yellow triangle that a girls peeks out from) and type what you want in-between the words spoilers.
