You can't really judge a game based on how it plays, since each character differs when it comes to gameplay style.
Even the most offensive guided games, like GG, has its share of turtle matchups.
And the most defensive guided games, like SF, has its share of rushdown matchups.

Taking in account that MvC3 is a tag/team based game, it will have much more variety.
But character by character? Most 2D fighters offer more options than MvC3.
