That aside, after seeing Shinobu drinking Araragi's blood in the anime made me want to know more about her. What does she think about Araragi and Oshino? Can she return to her old vampire form again? Will Araragi turn normal if that happens or will he keep his powers?

First, I don't know what Shinobu thinks about Oshino. That story will be in Kizumonogatari. In Bakemonogatari, Shinobu gets more attached to Araragi. Basically, Bakemonogatari is a harem, isn't it?

Second, yes, she can return to her old vampire form at the expense of Araragi's humanity. If Shinobu sucks all blood of Araragi, she will be back to the original form and Araragi will return to the full-time vampire, too. On the contrary, if Araragi stops giving his blood to Shinobu, he will become 100% human and Shinobu will die. He does not want either of these, so he lets Shinobu suck limited amount of his blood regularly and remains as a partial vampire.
