Technically, they could expand their shop and do two projects at once... but it just doesn't seem to be the way most of these anime shops think. There's probably concerns about quality control and creative control (not to mention financial risk) that drive them to stay small and put out one product at a time.
They would literally have to double the size of their company to do two projects at once and even then executives would have to juggle their focus.
And like Nop says, they're booked for the next 9 months or so but..... interestingly enough, they still don't have any announcements for any projects after May 2007.... about a year after the Suzumiya first hit the airwaves.
