Despite his strength Gai obviously isn't as known as Copy Ninja Kakashi, Itachi merely advised Kisame not to juge him on his funny attitude.
And then repeated that they should leave because they weren't here to fight as he kept saying since his appearance, especially now that Gai said that he called for reinforcement.
I don't think he acted differently for Gai than for Asuma and Kurenai or Kakashi.

Yeah, but Kakashi thought he could take Itachi on par Sharingan v. Sharingan. And that fell through, Gai could fight Itachi totally bypassing the Sharingan so he wouldn't fall trap to that. I think Itachi might have been a little weary fighting someone like that if he knew he couldn't pull him in with his Sharingan trap.
