For me it would be a very long list as I have a lot of favourite moments. For example...
HiME:
- first appearance of Gakutenou
- the whole Cake Wars episode
- all the (known) HiMEs prepare to save the school in the middle of the series
- the final flight of all HiMEs
Otome:
- all the Materialise sequences and all the Otome fights
- Haruka's first appearance in Zwei
- Chie's fangirls in Zwei
- dinners during hiking test
And all the humorous extras for both series.
