for avis and such, i do the whole virtualdub, save audio independently, get the subs, compress in tmpegenc etc etc etc, and for mkvs, i got ConvertXtoDVD, and its pretty simple to use although, not very configurable, but its great for getting those annoying(in the sense that they're not that easy to burn) mkvs to dvds.
